Woohoooo!!!

I survived Phase 1… only 3 to go! Cause you got to keep a positive attitude right! 😉 Ok it was only 2 days, and it was fat loading, which you’d think would be heaps of fun – however…. You need to keep your diet CLEAN – so no fat loading on junk food people, we are talking healthy fats.

** The point of Phase 1 is to create a store of good quality fats that your body will draw upon during phase 2 for nutrition support as we go into calorie restriction and burning off the stored fats that will contain some toxins. I stared the day with salmon, cooked in coconut oil, 2 poached eggs (there’s a story in itself, I realised I’d never poached eggs before, but seen it done on masterchef… 😉  😉 ….. well they didn’t exactly come out in 1 nice round piece put it that way! Anyway, I digress…) hollandaise sauce & half an avo! So lots of healthy fats there! Snacked on my Peanut butter fudge, lunch was 1/2 a wheel of Bree Cheese and 1/2 an avocado…. more snacking on fudge (I had to have a mandarin in the afternoon as i just needed some fruit) then dinner was marbled steak which I cooked in butter & with melted mozzarella cheese on top, had another 1/2 and avo and some fried mushrooms….. hmmmm feeling soooooo full!

 

So Sunday morning – must have done something right? I guess??? I gained 400g!!! While I figured I would definitely not loose weigh in this Phase (some people do) I was still a little thrown at the numbers, its hard not to be, right? So I went into the support group and asked the question, sure enough lots of lovely people assured me this was normal, happened to them and would come off quickly in phase 2 – good, right, onward I go!!

Food on Sunday was pretty much a repeat of Saturday with a few changes, Phil had hockey in the morning so I snacked on cashews during the game. LOTS of healthy fats for the rest of the day! By late Sunday I was growing a big food baby and feeling pretty uncomfortable! Woke up this morning to another 600g gain!

So if phase 1 is about gaining weight then I think I deserve a prize!!! I gained 1kg in 2 days!!! lol

Phase 2 has started today and I am really glad I don’t have to eat any more fudge! 😉 Stay tuned for pics of small meals and I’m sure some moodiness will start soon, but today I’m feeling great & full of good humour (in case you couldn’t tell…)

Recipe

Peanut Putter & Cacao Fudge

This fudge is made in 2 layers, I use a Thermomix but any blender will do. I poured into a silicone mould and set in the freezer. I always use a quality salt & a local raw honey. Most of my ingredients are organic where I can.

Peanut layer

  • 80g Coconut oil
    120g Crunchy peanut butter
    Pinch of salt
    40g Honey

Mix together – pour into mould to set while you make the next layer.

Cacao Layer

  • 80g coconut oil
  • 120g Peanut butter
  • pinch salt
  • 40g honey
  • 20g Cacao powder

Mix and pour in top of first layer.  Once set chop into bite size chunks & store in the fridge or freezer.
